Born in Salerno, Italy, Luigi di Benedetto grew up surrounded by the rich traditions of Italian cooking, learning from his mother and grandmother.

For Chef Luigi, Italian cuisine is all about purity—simple, fresh ingredients creating bold flavours. During Festa di Pasta, he brings this philosophy to Spring Café Brasserie, crafting a special menu that celebrates the authentic taste of Italy.
